It looks too good to eat, and yet it will be devoured with gusto, over toasts of Champagne and laughter and tears. It should be spotlighted and photographed in all its beautiful glory before it goes to a valiant end.
A bit of a tip from this wedding photographer. When saving the top tier of your wedding cake for your first anniversary, take off the larger decorations that protrude. If your tier is on cardboard, discard the cardboard and replace with a fresh piece of cardboard, wrapped in tinfoil. (A lingering cardboard taste is icky… that’s the technical term.) Put your cake in the freezer for 15-20 minutes to firm up the icing. Now it won’t stick to the first layer of plastic wrap. Wrap snugly with 2 layers of plastic wrap and 2 layers of aluminum foil, and place it in a box. Now it’s safe from the air that causes freezer burn, and also crushing. Let it defrost for 2 hours in your refrigerator the day before your anniversary. Unwrap the cake and put back in the frig. Just prior to eating let it rest at room temperature. Many brides and grooms don’t get more than one bite on their wedding day, but this tier is all yours to enjoy at your leisure.
